I was an experienced table maker (not for any website) but I don’t how to do anything fancy. You should be able to find random encounters this way with cheat engine.
1: Walk around until you hit an encounter.
2: After you win the encounter don’t move on the map.
3: In cheat engine, do a 4 byte unknown scan.
4: On the map take 1 or 2 steps.
5: in cheat engine, do your next scan for less then.
6: repeat steps 4 and 5.

Note: if that doesn’t work then the value is increasing so try this.

1: Walk around until you hit an encounter.
2: After you win the encounter don’t move on the map.
3: In cheat engine, do a 4 byte unknown scan.
4: On the map take 1 or 2 steps.
5: in cheat engine, do you next scan for greater then.
6: repeat steps 4 and 5.
Once you find the right value, click on it to add it to your table, then set the value to 0 if decreasing or to the highest if increasing and freeze the cheat and there you go, no encounters.
Hopefully you will only have a few results before an encounter and you can watch the values change on cheat engine to know which one is right.
Sorry I can’t help you better. ☹️

Finding static pointers with the cheat engine pointer scan is difficult depending on the game as sometimes you will have to try different settings to finally get a static address.
If it’s a mono game, then you can use mono dissect
To find static address instead of using a pointer scan.
I am just an experienced CE hacker, I hope an expert CE hacker on here can help you more soon, sorry.
Do a google search for “cheat engine Beginners Tutorial Understanding and Finding Pointers” and see if any YouTube videos will help you for now. ;)
Right now my gaming computer is down, so I have no way right to hack games. Sorry again I couldn’t help more.

please how to find mono dissect with cheat engine thanks ?

Do a google search for this, “cheat engine mono dissector beginners tutorial”

I’m not trying to be mean when saying this, but you might want to stick to learning pointer scans first if you really are a novice. I found learning mono dissect is harder than pointer scans and I think you will want to start with pointer scans. :D

I don’t have a computer right now, but I will try to help the best I can by finding a tutorial video so you can learn it. Once you get the hang of it, you can be proud that you can now do pointer scans.😀
Follow my instructions and once you add your address to your table, try this tutorial.
See if this tutorial helps. The guy talk with some kind of an accent, but I could understand him.
